Warm Up with Island Spices
Our Caribbean Curried Fish Stew is a comforting bowl of warmth infused with a rich blend of island spices. This hearty stew is a hug in a bowl, featuring flaky fish, velvety potatoes, and a curried coconut broth.
Ingredients:
- 2 lbs firm white fish like cod or snapper, cut into chunks
- 2 tablespoons curry powder
- 1 can coconut milk (14 oz)
- 2 large potatoes, peeled and diced
- 1 onion, diced
- 4 cloves garlic, minced
- 1 teaspoon fresh thyme leaves
- 1 scotch bonnet pepper, finely chopped (optional)
- Salt and pepper to taste
- Vegetable oil for cooking
Cooking the Stew:
- Heat oil in a pot over medium heat and cook the onion and garlic until softened.
- Stir in curry powder, thyme, and scotch bonnet pepper, cooking until fragrant.
- Pour in coconut milk and bring to a simmer.
- Add potatoes and cook until tender, about 15 minutes.
- Gently stir in the fish, cooking until opaque and cooked through.
