Jamaican Jerk Chicken Skewers

Fire up your grill for these Jamaican Jerk Chicken Skewers that infuse traditional island seasoning into tender chicken. It's a perfect way to bring the taste of the Caribbean to your backyard barbecue.

Ingredients:

  1. 2 lbs boneless, skinless chicken breasts, cut into cubes
  2. 1/4 cup Jamaican jerk seasoning
  3. 2 tablespoons soy sauce
  4. Juice of 1 lime
  5. 2 tablespoons honey
  6. 1 tablespoon vegetable oil
  7. Salt to taste
  8. Fresh pineapple chunks (optional)

Marinating the Chicken:

  1. In a bowl, whisk together jerk seasoning, soy sauce, lime juice, honey, and vegetable oil.
  2. Add the chicken cubes, tossing to coat evenly. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.

Preparing the Skewers:

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. Thread the marinated chicken pieces onto skewers, alternating with pineapple chunks if desired.

Grilling the Skewers:

  1. Preheat grill to medium-high heat.
  2. Grill the skewers, turning occasionally, until the chicken is cooked through and nicely charred, about 10-15 minutes.
