Caribbean-Southern Fusion BBQ Ribs

Experience the ultimate BBQ ribs with a Caribbean-Southern twist. These ribs are slow-cooked to perfection, infused with a spice blend that combines the sultry sweetness of the islands with the deep smokiness of Southern barbecue traditions.

Ingredients:

  1. 2 racks of pork ribs (about 4-5 pounds)
  2. 1/4 cup brown sugar
  3. 2 tablespoons Caribbean dry rub
  4. 1 tablespoon smoked paprika
  5. 1 teaspoon cayenne pepper
  6. 1 teaspoon ground allspice
  7. 1/2 teaspoon ground cloves
  8. 2 cups BBQ sauce (Caribbean-inspired preferred)
  9. Salt and freshly ground black pepper to taste

Preparing the Ribs:

  1. Remove the membrane from the back of the ribs and trim any excess fat.
  2. In a bowl, mix together brown sugar, Caribbean dry rub, smoked paprika, cayenne pepper, allspice, and cloves to create your spice blend.
  3. Rub the spice blend all over the ribs, covering both sides generously.
  4. Wrap the ribs in foil and let them marinate for at least 2 hours, or overnight in the refrigerator.

Grilling the Ribs:

  1. Preheat your grill to 225°F (107°C) for indirect grilling.
  2. Place the foil-wrapped ribs on the grill, meat-side up, and cook for about 2.5 hours.
  3. Remove the foil and baste the ribs with BBQ sauce every 30 minutes for another 1 hour, or until the ribs are tender and caramelized.
