Experience the ultimate BBQ ribs with a Caribbean-Southern twist. These ribs are slow-cooked to perfection, infused with a spice blend that combines the sultry sweetness of the islands with the deep smokiness of Southern barbecue traditions.
Ingredients:
- 2 racks of pork ribs (about 4-5 pounds)
- 1/4 cup brown sugar
- 2 tablespoons Caribbean dry rub
- 1 tablespoon smoked paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon ground allspice
- 1/2 teaspoon ground cloves
- 2 cups BBQ sauce (Caribbean-inspired preferred)
- Salt and freshly ground black pepper to taste
Preparing the Ribs:
- Remove the membrane from the back of the ribs and trim any excess fat.
- In a bowl, mix together brown sugar, Caribbean dry rub, smoked paprika, cayenne pepper, allspice, and cloves to create your spice blend.
- Rub the spice blend all over the ribs, covering both sides generously.
- Wrap the ribs in foil and let them marinate for at least 2 hours, or overnight in the refrigerator.
Grilling the Ribs:
- Preheat your grill to 225°F (107°C) for indirect grilling.
- Place the foil-wrapped ribs on the grill, meat-side up, and cook for about 2.5 hours.
- Remove the foil and baste the ribs with BBQ sauce every 30 minutes for another 1 hour, or until the ribs are tender and caramelized.
