Ingredients:

  1. 2 bell peppers, sliced
  2. 2 zucchinis, sliced into rounds
  3. 1 large red onion, cut into wedges
  4. 1 eggplant, sliced into rounds
  5. 1/4 cup olive oil
  6. 2 tablespoons Caribbean seasoning
  7. Salt and pepper to taste
  8. Fresh lime wedges for serving

Preparing the Vegetables:
